Blanch chicken wing roots in cold water.

Blanch, remove, wash and set aside.

Heat oil in a pan, add rock sugar and stir-fry until caramel color develops.

Clean ingredients and set aside.

Add the ingredients to the chicken wing roots and stir-fry then add water.

Cover the pot and simmer for about 15 minutes. Add salt.

Reduce the juice over high heat, remove the ingredients and put on a plate.
