Preheat oil in a pan, add garlic and ginger and saute until fragrant.

Add a spoonful of dark soy sauce and stir-fry until it becomes coloured, pour in an appropriate amount of water and bring to a boil over high heat, then reduce to low heat and simmer for 20 minutes.
