Melt the prawns.

Remove the shrimp skin and leave the tail. The head can be used or not, depending on personal preference.

Pick the mud line on the back, make a cut on the back, and pat the back a few times to loosen it. Then marinate with cooking wine and salt for a while.

Prepare the egg mixture and bread crumbs. Dip in egg liquid first, then coat in bread crumbs.

If you like cheese, you can wrap it in some cheese and dip it in egg liquid.
