Peel, wash and cut the pumpkin into pieces or strips

Peel the salted eggs and wash off the mucus on the skin, then put them into a small plate and steam them for about 5 minutes (note that when buying salted eggs, just buy fresh ones with no peculiar smell)

Roll the steamed salted eggs into powder, then season with salt, sugar, chicken powder,

Pour water into the pot and then add the cut pumpkin. The water will just cover the pumpkin

When the water is boiling, take the pumpkin out and run it under cold water. Rinse the pumpkin with cold water, drain the water, and add starch evenly. Pour it into a colander and shake it a few times to shake off the excess starch.

Heat the oil to 120 degrees. If you don’t know the oil temperature, you can put it in the oil pan and try it. If the pumpkin floats, the oil temperature is just right

After the oil is hot, put in the pumpkin and fry until golden brown, then take it out. If you don't know whether the pumpkin is cooked or not, you can use chopsticks to prick it. If it can't be pricked, it's not cooked. If it's just pierced, you can take it out. If it's just pierced, it means it's over-fried
