Drain the water from the whitebait (it will fall apart when fried without draining)

Chop onions and garlic and set aside

Beat the eggs and mix the whitebait together, add salt, green onions, chicken essence and seasonings (I use Nande)

Be careful when choosing whitebait. Most of the whitebait on the market are aquatic whitebait and artificial whitebait

Note: Fish all have a fishy smell. The ones with no fishy smell must be fake whitebait. The real whitebait is naturally curved. The straight ones are artificial whitebait or the real whitebait that has been "beautified" has texture similar to fish bones on the surface. The artificial whitebait breaks into pieces when pinched and cannot be boiled
