Mango Pancake
Overview
I fell in love with it the first time I ate it. I thought it was too laborious to use a pot to bake the pancake skin, and I had to watch it, so I used a microwave, which was much easier.

Pancake skin: Mix eggs and milk and beat well, then add pancake powder and stir evenly, finally add melted butter and stir into pancake paste

Pour a spoonful of batter into a flat plate, covering it with a thin layer, and place it in the microwave.

Microwave for one and a half minutes.

Carefully lift up the pandan skin and place it on the plastic wrap, then cover it with plastic wrap to prevent it from drying out. Finish all pancake skins in the same way. Note that there must be a protective film between the pancake skins, otherwise they will stick together.

Add sugar to the cream and beat with a whisk.

Peel and core the mango and scoop out the pulp.
