Overview
I've made a lot of toast, but the finished product didn't have a pleasing mountain shape. This time, the undulating mountain shape finally appeared. The inside of the bread was beautifully organized, chewy, and fragrant. The aroma of grapefruit-flavored toast became more prominent after one night!

Put the medium ingredients into the bread machine (120 grams of flour, 130 grams of water, 4 grams of yeast)

Mix well and ferment until doubled in size

Add other dough ingredients (180g flour, 50g eggs, 60g sugar)

Beat the dough until it becomes soft and fluffy, add grapefruit zest

Let the dough deflate and rest for 30 minutes

Deflate the dough and divide it into 3 equal parts and let it rest for 20 minutes

Leave to ferment in a warm and humid place for 7 minutes

Preset the oven to 200 degrees, put the baking sheet into the middle of the oven, and turn the heat up and down to 180 degrees
