Potato braised rice

My family all said it was delicious! It’s super easy to make, a must-have skill for mothers who don’t have time and lazy mothers. The rice was very wet and the potatoes were very soft and glutinous. There was no meat added, but it tasted like meat. I don't usually eat much rice and I just finished two full bowls. You can add your favorite ingredients to this basic potato stew, and it will be delicious no matter how you add it. Just add whatever is in the refrigerator, a great way to eliminate inventory in the refrigerator! Only potatoes are a must, and other vegetables are optional, such as: 1. Vegetarian - broad beans, peas, beans, shiitake mushrooms, king oyster mushrooms, dried beans, black fungus, onions, baby cabbage, eggplant, tomatoes, prunes, red cabbage, cucumber, broccoli, okra, yams... 2. Meat - sausage, ribs, ham, beef, beef balls, mutton, chicken legs, chicken breasts, bacon, shrimp... 3. Rice - oatmeal, brown rice... 4. Sauce - bean paste, Laoganma, beef sauce, Korean hot sauce, steamed fish soy sauce, oyster sauce...

After washing the rice, put it directly into the rice cooker and add water to soak it first. The rice that has been soaked in advance is softer. This softness has a different texture than the rotten rice cooked by adding too much water.

Crush the garlic and set aside. Peel the potatoes and cut into small pieces. Cut the onion into small pieces. Tear the king oyster mushroom directly——

Add oil to the wok. When the oil is hot, add the garlic and onion and sauté until fragrant. Add the drained potato cubes and king oyster mushrooms. Stir-fry until the edges of the potatoes are slightly browned. Turn to low heat. 🌻Tip: If you like a darker color, add 1 tablespoon of dark soy sauce.

Add bean paste and stir-fry until fragrant, then add cooking wine, light soy sauce, dark soy sauce, and sugar.

Stir-fry until evenly browned and turn off the heat. (The potatoes are still raw at this time, no need to fry them).

Pour all the fried vegetables into the uncooked rice, cover the rice cooker, and set it to cooking mode.

After the rice is cooked, open the lid, stir the potatoes and rice gently, sprinkle in the chopped green onion, and simmer for 10 minutes. When ready to serve, add some sesame oil and mix well. 🌻Tips: When sprinkling chopped green onions, you can break in an egg, then cover and simmer for 10 minutes. Warm reminder: I won’t tell you how delicious it is, lest you drool late at night. Give it a try, you won’t be disappointed! 1. The bean paste I use is June-flavored bean paste, which is not spicy and is suitable for children. 2. If the heavy taste is too bland, you can add salt or adjust the sauce, mix well, and simmer for a while to save it.
