Fried rice with chopped green onion, mint and egg
Overview
The rice cooked on the night of the Mid-Autumn Festival was basically left untouched, and the fried rice was fried the next morning. I had onions at home, and I saw some mint, so I also got some on the way. It's not rice specially used for fried rice. It's rice that's usually eaten. It's soft and sticky and doesn't fall apart when fried.

First scatter the leftover rice in the pot.

Prepare chopped green onion and mint, wash and chop.

Heat oil in a pan and break in three eggs.

Quickly stir-fry.

When the egg mixture is set, pour in the remaining rice. Fry quickly, pressing the rice with a spatula occasionally.

Stir-fry until almost dispersed, add salt.

Add a little soy sauce and continue frying.

Add chopped green onion and mint before serving and stir-fry evenly.

Stir well, turn off the heat and remove from the pan.
