Stir-fried bitter gourd with fried tofu
Overview
My husband and I both like to eat fried tofu, especially hot pot in winter, but we can’t eat hot pot in summer, so we thought of this dish. Bitter melon is suitable for clearing heat in summer

Steps
-
Wash and cut the fried tofu into shreds. It doesn't need to be too fine, usually just cut it into three to four knives. Shred the pepper into shreds and mince the garlic. The photo of bitter melon is cut into strips. You can use salt to reduce the bitter taste.
-
Put oil in the pot (the oil for the fried tofu should also be taken into consideration), add the garlic and stir-fry until fragrant, then add the chili pepper and bitter melon, add 1 teaspoon of salt, stir-fry until the bitter melon is a little soft, then add the fried tofu.
-
After stir-frying the fried tofu, add broth. If there is no water, you can do it, but the soup will taste better, because the fried tofu itself relies on the flavor of the soup to make it delicious. Cover the pot and simmer over medium heat.

When the juice is reduced, it is ready to serve. When serving, add some chicken essence.
