Mix powdered sugar and almond flour and sift into the protein paste
-
Use a rubber spatula to stir evenly from the bottom up
-
Divide the almond paste into different bowls and add the pigment you need. The amount of pigment is basically about 2 drops for each color. Continue to stir the almond paste with the pigment until it becomes fluid.
-
Put the prepared almond paste into a piping bag. You can add a round piping nozzle to the piping bag, or you can directly cut the tip of the piping bag and squeeze
-
Squeeze the almond paste onto the macaron silicone mat and leave it at room temperature for 30-40 minutes until the surface becomes non-sticky and forms a hard shell before baking
-
Preheat the oven, with upper and lower heat, middle layer, bake at 175 degrees for 7 minutes. When the skirt appears, lower the oven temperature to 130 degrees and bake for 20 minutes. After the macarons have cooled, use a knife to lift them up
