Eggplant with garlic paste
Overview
I remember when I was a child, my mother would often make this cold eggplant dish. The difference is that my mother dices the eggplant, cooks it in water, and then mixes it with seasonings. A plate of steamed eggplant, a steamed bun, and a bowl of soup is enough to satisfy you. Different from my mother, I use the steaming method, but the taste is still the same. My daughter also likes to eat eggplant, but the traditional fish-flavored eggplant contains too much oil, so it’s better for her to eat less of it, so this garlic eggplant dish is a regular at my family’s dining table.
