Buy a pig tail with the skin part cleaned off, wash and cut into sections, soak in cold water for half an hour to remove the blood

Peel the lotus root and carrot, cut into pieces and set aside. Pat two small pieces of ginger with a knife and set aside

Put the pig tails with blood removed into a casserole, add water and bring to a boil (more water is needed and the stewing time is longer), beat off the foam on the top, add an appropriate amount of salt, add beaten ginger and cut lotus roots and carrots

Simmer over high heat for half an hour, then reduce to low heat and simmer for two hours, then serve and enjoy
