Margaret Cookies
Overview
My daughter opened her hand and saw a beautifully packaged chocolate with five beans of different colors winking at me mischievously: "Mom, give this to you to take a photo and match the colors. I'm not even willing to eat it." I remembered that Elegant Bo Hui also told such an interesting story. Her family always asked if they had taken pictures before they would eat. My daughter is also thinking about my hobbies in her little mind, which is really full of happiness. So I solemnly put it away in the cookie barrel, and kept thinking about what to do to complement this little sweet jelly bean. Suddenly I thought of the fresh and simple Miss Margaret, it must be her. I opened the cabinet and took out the chocolate beans, only to find that there were four chocolate beans at some point. I couldn't help but smile. Oh, I forgot to mention, this cute little cookie has a long name from Miss Margaret who lives in Stresa, Italy - the English name is Italian Hard-boiled Egg Yolk Cookies.

Ingredients
Steps
-
Boil two hard-boiled eggs and remove the yolks. Place the egg yolk on the sieve and press it with your fingers to make the yolk pass through the sieve and become a fine powder.
-
Soften butter and cut into small cubes
-
Add powdered sugar and salt
-
Beat the eggs with a whisk until the volume is slightly enlarged, the color becomes slightly lighter, and it becomes puffy
-
Sift the low-gluten flour and cornstarch into the whipped butter
-
Pour in the egg yolks and mix well
-
Knead the dough with your hands
-
The kneaded dough should be slightly dry, not too moist, and will not spread due to dryness. Wrap the dough in plastic wrap and refrigerate for 1 hour. Take it out and cut it into pieces of about 10 grams.
-
Take a small piece and roll it into a small ball
-
Place the small balls on the baking sheet and flatten them with your thumbs. When pressed flat, the biscuits will have natural cracks.
-
Make all the cookies in turn and put them in the middle rack of the oven at 170 degrees for 15-20 minutes until the edges are slightly browned
