Preparation: purple eggplant, pepper.

Cut the purple eggplant into thin slices.

Add salt, mix well and marinate for 20 minutes.

Cut the peppers into rings and prepare some minced garlic.

Rinse the pickled eggplant several times with water.

Squeeze dry.

Heat the pan with a little more oil, add the eggplant and stir-fry over high heat for a minute or two.

Sauté until eggplant becomes soft.

Add the minced garlic and chili rings and stir-fry quickly for a while. I try to test if the taste is just right without seasoning. If it's not flavorful enough, you can add a little oyster sauce to make it fresh.
