Cut the potatoes into shreds, wash them twice in cold water, take them out and set aside.

Shred the pork, chop green onions and minced garlic and set aside. 1 dried chili pepper, if you like spicy food, you can add more as appropriate.

Heat oil in a wok, add dried chili peppers and shredded pork one by one and stir-fry. Add chopped green onion.

Add shredded potatoes and stir-fry, pour in appropriate amount of rice vinegar, and add salt. Stir-fry until the last time it comes out of the pan. Add the minced garlic, stir-fry a few times, turn off the heat and remove from the pan.
