Pumpkin Tremella Soup (sugar-free)
Overview
Tremella is a suitable food for diabetes, but the general method is to use rock sugar. This method uses the sweetness of pumpkin, red dates, and wolfberry instead of sugar. The finished product has a slight sweetness, but will not raise blood sugar.

Soak the white fungus one night in advance

Cut the pumpkin into small pieces and break up the red dates

Soak wolfberry

Put the white fungus in a casserole and add enough water to bring to a boil over high heat. Turn to low heat for 1 hour and 15 minutes, add dates, pumpkin, and wolfberry, and simmer for another half an hour.
