Slice the beef against the grain and marinate it with oil, salt, sugar, soy sauce and cornstarch for about ten minutes. Remove the seeds and inner capsule of the bitter melon.

Slice the bitter melon and pickle with salt. If there is too much, rinse it with water, otherwise it will be too salty and unhealthy.

Heat oil and add ginger slices.

After boiling the oil, add ginger and stir-fry the beef until it is six to seven ripe, then add the cold melon and stir-fry until the beef is no longer red to avoid being too old.
