When choosing passion fruit, it is best to choose passion fruits that are dark in color (the darker the color, the riper) and heavy (the heavier, the more moisture).

Open the passion fruit one by one, scoop the fruit capsules into a container (a bowl or any kind of equipment will do), scoop out the fruit capsules, and store them in the refrigerator overnight (other people keep them for 3 hours, because I went to bed after finishing them last night, so I kept them overnight).

Put the fruit capsule into the pot and cook (I only have a pressure cooker, so I use the heating function of the pressure cooker), and add rock sugar as appropriate (I added rock sugar while testing the sweetness, and finally only put three pieces of rock sugar). Stir while heating. When it finally boils and the pulp becomes darker in color, turn to keep warm and continue stirring.

After stirring for about half an hour, the pulp becomes transparent and viscous, and when the overall color becomes darker, pour it out.

Sterilize the bottle containing the jam with boiling water and blow dry with a hair dryer.

When the jam becomes warm, place it in a bottle and store it tightly in the refrigerator.
