Snow Peanut Crispy
Overview
I had a lot of chopped peanuts left over from making peanut shortbread, and just two days ago I saw a traditional Italian Christmas cookie made with hazelnut powder. So I decided to use the crushed peanuts to make a fake. Hazelnut powder needs to be fried over low heat, while the ground peanuts are already cooked and can be directly ground into powder. The fried hazelnut powder needs to be poured into the container while it is hot, and the residual heat is used to melt the butter. After thinking about it, I decided to use the beaten peanut powder directly. The weather is warm enough, the butter has been softened in advance, and it is easy to mix with the flour and peanut powder. After searching high and low for a long time, I couldn't find the use of honey, so I had to pour it into the dough together with peanut powder. The final mixed dough is not as hard and strong as it looks in the picture, but soft and crack-free. I can’t figure out whether the peanut powder is too fine or the temperature is too high. I was worried that the dough would stick to my hands during subsequent operations, so I simply put it in the refrigerator. Anyway, I'm not in a hurry. Dough that has hardened in the refrigerator is much more reassuring to work with. Roll into a ball, flatten, bake, wait for 20 minutes to cool, and sift the powdered sugar over it. Suddenly it became clear why it was a Christmas cookie. There is only a little honey, and the biscuit itself has no sweetness. All the sweetness depends on the powdered sugar on the surface. . . .
