Totoro Macaron
Overview
My love for making macarons has never diminished. The weather has been dry recently, which is very suitable for making macarons. I started making ponies in the middle of the night. This time I tried to make a Totoro macaron and decorated it with icing. It was very cute. It is stuffed with lemon filling that has been prepared before. The sweet and sour combination makes it not boring to eat.

Mix almond powder and powdered sugar evenly and sift

Dig a small hole in the TPT, pour 19 grams of egg white, and cover it lightly

Prepare 19 grams of egg white

Pour 9 grams of fine granulated sugar into the egg whites and add protein powder

Beat with a whisk until stiff peaks form and short peaks appear as shown

Pour 13 grams of water and 42 grams of fine sugar into a small milk pot and bring to a boil over low heat to 118 degrees

While beating the egg whites at high speed, pour in the cooked sugar water. The sugar water can be added in 4-5 times. Whisk at high speed each time to cool down. The sugar water should avoid dripping onto the whisk head and the wall of the bowl

Beat until there is a shiny hard curved hook about 2/3 finger long

Use a spatula to mix the egg white and TPT ingredients evenly

Take 1/3 of the meringue and add it to the almond paste. Add 1/2 teaspoon of bamboo charcoal powder and mix evenly

Add 1/3 of the meringue and mix gently
-
Add the last 1/3 and mix gently evenly
-
The final state is slightly thick and ribbon-like. If it is very smooth, the batter may be too thin

Put into piping bag

When extruding the shape of Totoro, be sure to space it out
-
Put it in the oven and bake it with hot air circulation at about 40 degrees for 15 minutes, then the skin will form and it will not stick to your hands

Put it in the middle and lower rack of the oven and bake it at 130 degrees for 16 minutes (you can control the temperature of the oven yourself, my oven temperature is on the high side, the temperature is around 150) and the skirt will appear in about 5 minutes

After baking, let the macarons cool completely before taking them out

Peel off gently

Break one open and see, there is no hollow

Use white icing sugar to paint the whites of the eyes and belly. After it dries, use black icing sugar to dot the eyes, beard and pattern. Let it dry and set aside

Squeeze on the lemon cream sauce, cover with another lid, seal and refrigerate overnight before eating
