Scallion Chicken
Overview
A home-cooked scallion chicken with an authentic Cantonese flavor. It is tender, delicious, authentic, and simple to make. It is also one of my favorite dishes.

Prepare the main materials. 8 dried shallots and half chicken.

Pour water into a pot and bring to a boil. Wash the chicken and put it on a plate. Cover the pot tightly and steam over high heat for 15 minutes.

Peel the skin off the dried onions and flatten them with a knife.

After 15 minutes, remove the chicken and chop it into small pieces.

Arrange neatly on a plate.

Pour away the water from the steamed chicken and put it back into the pot, add an appropriate amount of oil and sauté the dried onions until fragrant.

Add about 60 ml of steamed fish soy sauce and bring to a boil. (The amount of soy sauce for steamed fish is optional)

Pour the scallion oil sauce evenly over the surface of the chicken pieces to finish.
