Double skin milk, milky and smooth, is one of my favorite desserts. The authentic double skin milk is very sophisticated. We don’t have buffalo milk here, so we used Yili instead. I made it very simply, it’s a lazy person’s version

I prefer to eat fruits, so I added walnuts and bananas. You can also add some honey beans, which are also delicious. You can add them according to your own taste

Do not boil the milk. When it is about to boil, turn off the heat and set it aside to cool until the milk skin forms

Add sugar to egg whites. If you like it sweet, you can add more. I like it sweet and add two tablespoons

Stir thoroughly and skim off the white foam

Make a slit in the milk with milk skin, pour the milk out and mix with the egg whites, then pour it back into the bowl with milk skin, let the milk skin float on top, it is double skin

Steam in a pot. After the water is boiled, steam for 15 minutes and then take it out of the pot. (If there is plastic wrap, you can cover it with a prick. I don’t have it at home, so I left it unsealed.)
