The taste of spring (shepherd's purse, spinach and eggs)

Wash spinach and shepherd’s purse and drain

Remove the spinach and shepherd's purse and put them on a plate. Wait until they are cool enough to touch. Then wash your hands. Squeeze out some of the water from the spinach and shepherd's purse. Don't squeeze it too dry and squeeze out about 70% of the water. Otherwise it will taste too dry.

Beat two eggs (I used Ben eggs). Add a little salt to the egg mixture. This makes it easier to beat evenly. Don't add too much salt because it can be seasoned when mixing at the end.
