Donkey rolling
Overview
Donkey Rolling is one of the traditional snacks of old Beijing. The finished product has three distinct colors of yellow, white and red, which is really beautiful. Because the soybean noodles sprinkled in the final production process are like the loess thrown up by wild donkeys rolling around in the suburbs of old Beijing, hence the name Donkey Rolling. The raw materials for donkey rolling include rhubarb rice noodles, soybean noodles, Chengsha, sugar, sesame oil, osmanthus, green and red silk and melon kernels. Its production is divided into three processes: blank making, filling and shaping. The outer layer of the prepared donkey rolls is covered with bean flour, which is golden in color. The bean-flavored filling is sweet, soft in the mouth and has a unique flavor. It is a traditional snack suitable for all ages.

Put the soybean noodles into a pan without oil and water, and stir-fry over low heat. When the color of the soybean noodles changes from light yellow to a uniform light brown, and you can smell the obvious bean aroma, you can stop the fire. Let the fried soybean noodles cool slightly, sift and set aside
