Grapefruit tea
Overview
Traditional Chinese medicine believes that grapefruit is sweet, sour and cold in nature. Grapefruit and lemon should be washed with salt in advance. After washing, use a peeler to peel out the peel of the grapefruit and lemon. The thinner the better

Powder the yellow rock sugar. If you don’t have yellow rock sugar, just use rock sugar instead

Cut the grapefruit peel and lemon peel into shreds, the thinner the better

Use salt to squeeze out the astringent water from the shredded grapefruit peel, rub it with salt to remove the astringent water, and repeat the scrubbing for two or three times

Squeeze out the water from the rinsed grapefruit peel, and cover it with 150 grams of yellow rock sugar. (This step is a key step to make the grapefruit peel not bitter and cannot be ignored)

Marinate with rock sugar overnight (or 12 hours) until the grapefruit peel becomes transparent and glassy

Peel out the grapefruit flesh and set aside

After marinating for 12 hours, stir-fry the grapefruit peel and lemon peel together. Stir-fry until the rock sugar dissolves, then add the remaining rock sugar and stir-fry until it dissolves

After frying until the rock sugar melts, add the pulp and lemon juice (adding lemon juice can make the grapefruit jam more flavorful) and then stir-fry until the jam has a thick consistency

Let the pulp simmer for a while until the water evaporates. Don't fry it too much or it will harden without adding cold grapefruit tea. The fried grapefruit paste can be bottled and stored
