Go to the market and choose a fresh lotus root (medium size, about 500G), wash it, peel it and cut it; do not cut it with the first knife, but cut it with the second knife to make a V-shaped opening in the lotus root so that the meat is not inserted under the next cloth. After cutting, soak it in water to remove the sludge.

To make meat filling, it is best to chop pork belly (which is oily but not greasy), add a clove of garlic and a star anise (star anise varies from person to person, you can leave it out if you don’t like it, I like the aroma, so I added it) and mince them together; then add an appropriate amount of light soy sauce, refined salt, starch, and an egg white, mix well and set aside.

Use chopsticks to put the prepared meat filling into the lotus root slices, as shown in the picture, it is very simple.

Heat the oil in a pan and fry until slightly brown, then fry on the other side; because the lotus root itself can be eaten raw, you can remove it from the pan after you feel that the meat is not yet cooked; you can eat it if you are not afraid of getting burned. Since our family is afraid of getting burned, we added a step.

Since the lotus roots are already cooked, they are steamed in a rice cooker just to remove the heat.
