Overview
This time it was all done by hand. It took several hours. After I finished it, I decided to buy a sausage filling machine from Taobao. It was too tiring to do it manually. I was the only one with no one to help, so I couldn’t take pictures of the filling process. It was very embarrassing

Wash the front leg meat and soak in water to remove the blood

Soak for 20 minutes, then cut into pieces and put into a food processor in batches to puree

The minced meat is very delicate, the finer the better!

The filled sausages can be baked directly in the oven after 2-4 hours of drying (oven temperature 180-200, 20-25 minutes). You can also steam them in a steamer, air-dry them, or put them in the refrigerator to eat and steam and bake them at any time (⊙o⊙)
