Steps

Put all the ingredients for the medium-sized dough into the bread bucket in order of liquid first and then powder.

Stir into a slightly smooth dough. (I used a dough kneading program for 15 minutes)

Place the dough into a larger bowl.

Cover with plastic wrap and ferment at room temperature for half an hour, then refrigerate and ferment overnight until 2 to 2.5 times in size. (Complete refrigerated fermentation takes about 18 hours)

Add the main dough ingredients to the bread barrel, tear the fermented medium-sized dough into small pieces and put them into the bread barrel to start the dough mixing process.

Knead until it forms a ball and then add the softened butter.

Knead until the dough is smooth and a large film can be pulled out. At this time, the dough has reached the complete stage and is suitable for making toast.

Put the dough back on your hands and add the dried cranberries.

Continue kneading for two to three minutes until completely covered in dough.

Cover with plastic wrap and continue to ferment for 15 minutes.

Take out the dough and deflate it gently, divide into three equal parts, cover with plastic wrap and let rest for 15 minutes.

Take a piece of dough and roll it up and down from the middle into a shape of beef tongue.

Then roll it up from one side.

Roll up all three pieces of dough and braid them into a braid.

Place in bread pan.

Cover with plastic wrap and ferment until it doubles in size. Brush the surface with a layer of whole egg liquid.

Wrap tin foil on the outside of the bread barrel, start the baking program, select Coloring, and set the time to 45 minutes. The picture shows the baked bread.
