Wash the kumquats you bought with salt. Soak in salt water for half an hour to drain out the water.

Blanch with boiling water. You don’t need to cook it for too long, just take it out when the pot boils. Cut the kumquat in half

Add appropriate amount of rock sugar, if you like sweeter, you can add more.

No need to add water, just turn on the heat and stir, and the water in the kumquats will come out in a while. Then just keep stirring. Turn off the heat when it starts to bubble.

Let it dry for a while before bottling.

Personally, I prefer glass containers. Keep in the refrigerator and eat as you go. My throat felt very comfortable after eating.
