Wash the sauerkraut and tear it apart with your hands.

Wash the pork bones. I also added some pork rinds.

Pork bones and skin are placed at the bottom of the pot.

Place the sauerkraut on top of the pork bones, just add enough water to cover the ingredients.

Bring to a boil, turn to low heat and simmer for 15 minutes.

Cut bitter melon into cubes.

After simmering for 15 minutes, wait until the gas subsides, open the lid of the pot, put the bitter melon in, and simmer for another 3 to 5 minutes. .
