Soak the bones for half an hour and rinse. Chop onion and ginger. There is also a green radish at home. It is a bit cold when eaten raw, so I might as well cut it into a stew. Just put one star anise.

Put the big bones in the pot and bring to a boil, skimming off the foam while cooking, and cook until no more foam is produced. Remove and transfer to casserole.

Add water to the casserole to cover the bones. Add onion, ginger and star anise, bring to a boil over high heat, cover, lower heat and simmer. Don’t forget to come back and stir and add water during this period.
