Braised prawns
Overview
Mainly salty and fresh, slightly sour and slightly sweet, with crispy skin. This dish is delicious as an appetizer, but expensive.

Wash the prawns and cut off the whiskers with scissors

Cut the ginger into shreds or slices. If you like the ginger, cut it into dices. If you don't like the ginger, cut it into slices. You can pick it out when it's out of the pot.

Heat oil in a pan until 50% of the oil is heated, add the prawns and fry over medium heat, turning carefully, and fry for about 5 minutes, until the skin of the prawns is crispy. Then add the cooking wine, onion and ginger water. After evaporating, add an appropriate amount of water to make it even with the shrimp. Add salt and sugar. After boiling, cover and simmer over medium heat
