Kung Pao King Oyster Mushroom
Overview
Pleurotus eryngii is named for its almond aroma and fleshy meat that tastes like abalone. People prefer to use it to cook light meals and enjoy its original flavor. I tried using it to make Kung Pao, and I had an unexpected surprise.

Fry the peanuts in cold oil in a small pot and set aside.

Dice the king oyster mushrooms, cut the green garlic sprouts and dried chilies into sections, heat the oil in the pot, add the peppercorns and chili peppers and stir-fry until fragrant.

Add king oyster mushrooms and fry until cooked.

Finally, pour in the peanuts, add salt, bean paste and green garlic sprouts.
