Yunnan ham mooncake
Overview
This is a salty and sweet mooncake. The fillings are all the lean meat of ham, and the flavor of ham fills your mouth when you bite it. And this ham was brought back from Yunnan. It is authentic Yunnan ham and tastes great. A mooncake that children love very much. Message: Let the children bloom like flowers!

Ingredients
Steps
-
Put all the inverted syrup, alkaline water and oil into a basin, stir until completely dissolved
-
Add milk powder and flour
-
Knead into dough and let it rest for about an hour.
-
The Xuanwei ham I bought from Yunnan is the best ingredient for making Yunnan ham mooncakes
-
Cut into 1cm thick slices and soak in warm water to let some salt soak out. Change the water twice in between
-
Steam the soaked ham for 20 minutes until cooked. As long as the lean part is used, the fat part is useless
-
Cut the ham into rice-sized dices
-
Put it in a basin, add honey, grape seed oil, rose sauce, and white wine. First mix the ham with honey and oil, and soak for a while. I forgot to take pictures of this process, so the text explains it
-
Then mix well with flour
-
Just grab it and it will form into a ball
-
Let the mixed filling sit for about an hour to allow it to fully moisten.
-
Divide the filling into 40g portions and the dough into 10g portions
-
Wrap the filling with dough.
-
Sprinkle cooked glutinous rice flour into the mold, put it into the mold and spray the baking pan with water to prevent cracking
-
Preheat the oven to 180 degrees for 5 minutes, bake in the oven for 5 minutes, then take it out and brush with egg wash, continue to bake for 15 minutes
-
The baked ham mooncakes are very fragrant. The oil will return after one day.
