Baked potato dices with egg yolk
Overview
Egg yolk baked potato cubes must use salted egg yolk to achieve the sanding effect. Generally, salted duck egg yolk is used, but other salted egg yolks can also be used if available. The fried potatoes are charred on the outside and waxy on the inside, and are coated with a layer of fragrant salted duck egg yolk. It can be eaten with both wine and rice. It is quite good.

Boil the salted duck eggs, take the yolk and set aside.

Dice the potatoes. Soak in water for 10 minutes. Remove and drain.

Put oil in the pot, heat 50%, add diced potatoes and fry. Fry until the diced potatoes are slightly firm, then take them out.

Increase the oil temperature to over 70% heat, add diced potatoes and fry again. Fry until golden brown and set aside.

Leave a little oil in the pot, add salted duck egg yolk, and fry slowly over low heat. Fry until the duck egg yolk has no particles and is fluffy and sanded.

Add reserved diced potatoes.

Turn off the heat. For quick stir-frying, you can use a spoon. Coat the salted egg yolk evenly on the diced potatoes.
