Get a duck rack ready. This is the duck rack I brought back from a restaurant after eating roast duck.

Tear the duck rack into small pieces by hand or with a knife

Put it into the wok and stir-fry over low heat (the duck rack itself has oil, so there is no need to put oil in the wok)

Add two pieces of ginger and continue to stir-fry

Stir-fry and pour out the oil

Pour boiling water over the duck rack

Add enough water to cover the duck rack at one time, avoid adding water midway

Cover and turn the pot over high heat, turn to low heat and simmer for 40 minutes, add white pepper (you can add cabbage, tofu, etc. if you like vegetables at this time), simmer for another 20 minutes, add salt and remove from the pot.
