Prepare the ingredients: wash the fish bones and drain them with kitchen paper, cut some shredded ginger and crispy fried powder.

Put the fish bones into a large bowl, add pepper, sugar, salt and cooking wine, mix well and marinate for a while.

Dip the marinated fish bones into a layer of crispy fried powder and set aside.

Heat oil in a pot until it is 60% hot, add fish bones and fry over medium heat.

Flip and fry the other side after about four minutes.

Fry until both sides are golden brown and crispy.
