Overview

Fansha is what we call it in Chaoshan. I don’t know what it is called in other places. It means boiling the sugar to melt, pouring the ingredients in, and then frying the sugar until dry.

  1. Peel the purple and sweet potatoes, cut them into strips, and wash them with water to remove the starch on the surface so they won't stick to the pan when fried.

  2. Put a little more oil in the pan. Put the sweet potatoes in and fry. If you have more, you can divide it several times.

  3. Fry until the surface is a little burnt, then take it out.

  4. Pour out the oil from the French fries and put water in the pot. The ratio of water to sugar is 1:2. The fire doesn't need to be too high, just stir it with a spatula while it's cooking.

  5. Boil the sugar until it becomes thick. Pick up the spatula and the sugar will drip slowly, like honey, not like water droplets.

  6. Pour the fried sweet potatoes into the pot in which the sugar has been boiled, turn off the heat, and stir quickly and continuously until the sugar is thickened. Be sure to turn off the heat, otherwise the sand will not return.

  7. Done, put it on the plate.
