Overview

The Mid-Autumn Festival is coming soon again, but I have always disliked eating mooncakes. I feel that they are really not to my taste. A few days ago, I saw someone else’s recipe that was made from sago, but I spent two days at home without success, and I felt depressed. My husband told me that I always make weird things, which is wasteful. I was wasting materials, but I didn’t feel more angry. I thought I still had some agar-agar at home. I thought I’d seen others making mooncakes with agar-agar, so I thought I’d try it myself. Unexpectedly, it worked, but the agar-agar tastes a little harder and doesn’t have the QQ feeling of sago. However, our baby still likes to eat it, and I feel happy.

  2. Steam the purple sweet potato and pumpkin in a pressure cooker for about 8 to 10 minutes

  3. Steam and sieve the purple sweet potatoes. If you like it sweet, you can add some sugar. If it's a little dry, just add some water or milk and stir evenly. Don't add too much water or milk, otherwise it won't form a ball.

  4. Because the pumpkin is too watery, after it is steamed, it needs to be fried in a non-stick pan to dry out the water. If you have cornstarch or cornstarch at home, you can thicken it, which will dry it out a little and make it easier to shape

  5. Soak the agar in cold water one hour in advance. Add 500 grams of water, 10 grams of agar, 40 grams of sugar, and 5 grams of dried osmanthus. Put it in a small pot and boil over low heat until the agar melts. It takes about 15 to 20 minutes. Stir constantly and be careful to make a paste (the method of making milk is the same as that of water, but there is no dried osmanthus, so I won’t go into details)

  6. Pour the boiled agar-agar water into the mold, only about one-third of it is enough, and put it in the refrigerator to cool quickly

  7. Wait for the surface of the agar liquid to solidify, add purple potato puree and pumpkin puree (I am in a hurry today, so the fried pumpkin puree is still a bit thin), then pour in the agar liquid and it is ready

  8. Put all the prepared crystal mooncakes in the refrigerator, which will taste better. Be sure to wait until the agar-agar liquid has completely solidified before demoulding
