Grilled Scallops with Garlic Sauce
Overview
For those of us who live in coastal cities, a variety of seafood is indispensable on the dining table. Although the sea has been closed now and there are fewer fish, the variety of shellfish is still quite abundant. Perhaps because of the low temperature of the sea water, the seafood seems to be more delicious than those in the south. The grilled fresh scallops with pea sauce taste really good.

Ingredients
Steps
-
Brush the scallops clean, pry open a small opening with a knife, cut off the scallop column on one side, and the shells can be easily separated.
-
Cut the other half of the scallop column and take out the meat.
-
Remove the black piece at the bottom. Some people eat it directly, but I don’t think it can be eaten without removing it.
-
Arrange the cleaned scallops in a baking dish.
-
Also prepare onions, garlic and bell peppers, cut into cubes respectively.
-
Put a spoonful of peanut oil in the pot, add minced garlic and stir-fry until it turns slightly yellow.
-
Sprinkle the fried garlic over the scallops, and then sprinkle in some raw garlic.
-
Heat the middle rack of the oven at 200 degrees for about ten minutes.
-
While the scallops are searing, make the sauce: Start by cooking the peas in the pan.
-
Place the cooked peas in a food processor, add salt, pepper, olive oil, a few drops of light soy sauce and Sichuan peppercorn oil.
-
Add another tablespoon of whipping cream.
-
Put it into a food processor and beat into a puree. Don't beat it too finely. It's better to keep a little grainy.
-
Take out the seared scallops, sprinkle with chopped green onion, and pour the prepared pea sauce. Eat it while it's hot!
-
Pureed peas also taste great on their own.
