Clean the fish and wipe away the water.

Cut salt-braised tofu into thick slices.

Heat oil in a pan, add fish and fry until brown on both sides.

Add ginger slices, shallots, and chili peppers and stir-fry until fragrant, then add cooking wine and light soy sauce.

Add appropriate amount of hot water.

Add tofu, scallions, season with salt and cook for 20 minutes, turning the fish over halfway through.
