Cai Ding Pu Eggplant

Peel and cut the eggplant into strips, put it on a large plate, add about 1 tablespoon of vegetable oil, 1 teaspoon of sesame seeds, and 1/4 teaspoon of sugar. Stir evenly with your hands and spread it on a baking sheet brushed with vegetable oil;

Place the rack in the preheated oven and bake for 12-15 minutes at 400F;

Spread the roasted eggplant strips on the plate;

While roasting the eggplant, we can prepare the ingredients, cut the bacon, red peppers, carrots, and mushrooms into cubes, wash the corn, and green beans and drain them;

Stir-fry the corn and green beans to dry the water, set aside;

Add a little oil to the pot, stir-fry the mushrooms and set aside;

Stir-fry the carrots, because carrots can work better if they are fried in oil;

First stir out a little oil from the bacon, but don't make it too burnt. Once a little oil comes out, turn off the heat and set aside;
