Tear off both ends of the snow peas and wash them, blanch them in a pot of boiling water and take them out immediately. Peel and devein the shrimps. Add pepper, cooking wine and egg white, mix well and marinate for 10 minutes.

Heat the pan with cold oil, add the shrimp balls and stir-fry until they change color and set aside.

Leave oil in the pot, add minced ginger and garlic and saute until fragrant, then add snow peas and stir-fry for a while.

Pour in the fried shrimp balls and red pepper shreds and stir-fry evenly.

Add salt to taste and stir well.
