Sweet coconut dumplings
Overview
I sorted out the cupboard and found a bag of shredded coconut, and used it to make a snack while my children were taking a nap. The version I made this time has less oil and less sugar, so it’s not stressful to eat (the finished product is really loved by the children, and they even named it coconut dumplings, which is so cute)

Preparation materials: one egg, 20g milk powder, 30g sugar, 40g butter, 50g cake flour, 100g coconut

Cut the butter into small pieces and soften it at room temperature. Add the sugar and beat it lightly with a whisk

Whisk until white and thick

To the whipped butter, add egg liquid in small amounts and stir evenly

Add 90g of grated coconut and mix evenly with a spatula

Sift in the milk powder and cake flour, stir with a spatula and mix evenly

Arrange into dough shape. (Cover with plastic wrap and refrigerate for half an hour, in order to facilitate shaping and not stick to your hands)

Take 10g of each dough and knead it into several small balls, put them into a bowl with the remaining 10g of coconut paste, and roll the coconut paste one by one;

Place on a baking sheet, place in a preheated oven, and bake at 150 degrees for 20 minutes;
