Boil the pot under boiling water for two to three minutes, remove and rinse with warm water.

Cut green onions into sections and slice ginger. Star anise and rock sugar are ready.

Heat the oil, add rock sugar, bring to a boil over low heat, add pork, stir-fry quickly to evenly color.

Add onions, ginger, star anise, salt, and dark soy sauce and continue to stir-fry until fragrant. Add warm water just enough to cover the pork. Add an appropriate amount of cooking wine. Cover the pot and bring to a boil over high heat, then reduce to low heat and simmer for 40 minutes.

After forty minutes, open the lid of the pot, reduce the sauce over high heat until the sauce is thick and the meat is shiny, then turn off the heat. Put it out on a plate and remove the green onion, ginger and star anise.
