Nougat
Overview
Nougat generally refers to candies made of roasted nuts and honey, which are divided into soft and hard types. The soft one is white nougat made from egg white, while the hard one is brown and made from caramel, with a hard and crisp texture. Traditional nougat is mainly produced in Spain, and its main ingredients are roasted almonds, followed by honey and egg whites. Nougat is also produced in other places such as Australia, and the ingredients and taste vary.

First boil the sugar water, pour the water and syrup into the milk pot

Add 360g of granulated sugar, boil over medium heat until the sugar water reaches 145 degrees

While the sugar water is boiling, add salt to the egg whites, add sugar in batches, and beat until stiff peaks form.

Slowly add the boiled sugar water to the beaten meringue, and stir quickly with a whisk.

Add butter and stir evenly.
