Cold Shredded Potatoes
Overview
The weather is hot, and I feel irritable. The smoke is billowing from the fire on a hot day, and the chili and garlic are choking my nose and eyes. It’s not very enjoyable. Simple and delicious right before your eyes! Just make an appetizing and refreshing cold dish - cold shredded potatoes to try, it's still good.

Have materials ready.

After peeling the potatoes, cut them into thin slices and then into thin strips.

Soak the cut potato shreds in water, then repeat soaking and washing several times, mainly to soak out the potato starch, so that the taste will be crisper.

Cut the carrots into shreds as well.

Green peppers are also cut into shreds.

Chop garlic and ginger into puree.

Boil water in a pot. Add shredded potatoes and cook for another minute after the water boils again.

Pick up the potato shreds and drain the water, put them into cold boiled water and soak them. After a few minutes, remove the water and drain them.

Add shredded carrots and blanch for about 1 minute, remove and soak in cold boiled water.

Put the green pepper shreds in a draining spoon, put them in boiling water and drain them immediately.

Put shredded potatoes, carrots and green peppers into a bowl and set aside.

Heat oil in a pot, add minced ginger and garlic and sauté until fragrant.

Put the fried minced garlic into the shredded potatoes, and pour (3 tablespoons of soy sauce) and four tablespoons of fresh water.

Add a little sesame oil.

Add three spoons of vinegar.

Add a small spoonful of sugar.
