Wash purple cabbage and cut into small pieces. Put it into a food processor, then pour a bowl of cold boiled water, crush and filter, then take the juice, add a small spoonful of white vinegar, it will turn pink instantly. Wash lotus root with clean water and slice into slices. Get a container and put honey in it. Pour honey into purple cabbage juice and mix thoroughly. Soak the lotus root slices. After an hour, remove and serve.

Wash the glutinous rice, add water and sugar and soak overnight, drain and set aside. Brush the lotus root with mud, peel and wash it, cut it about 5cm from the thick end, and stuff the glutinous rice into each lotus root hole. It doesn't need to be too tight. The glutinous rice will swell slightly during the cooking process. Cover the cut lotus root head and secure it with toothpicks. Put the lotus root into the pressure cooker, add water to cover the lotus root body, and add three tablespoons of brown sugar. After the pressure cooker is inflated, let it cool for 20 minutes, then slice it into slices. Take out a little of the brown sugar water used to cook the lotus roots, put it into another small pot, add sugar, and cook the sugar juice until it becomes thick. It can be dipped when eating.
