Remove heads and shells from shrimps

Leave the tail on and make a cut from the back without cutting off the intestines of the shrimp. It is easy to clean

Rinse the cut shrimps with water

Add egg white, a little salt and pepper, appropriate amount of dry starch and marinate for ten minutes

Cut asparagus into sections and set aside

Mango can be any kind of mango, provided it is very fragrant

Take the mango pulp and cut it into pieces

Blanch the asparagus in boiling water and run it through cold water to keep the color bright and not fade

Also blanch the marinated shrimp, which is healthier and less oily

Put the three ingredients into the pot and stir-fry

Add asparagus, shrimp, mango

Heat the pan and add cooking oil (olive oil is best). Stir-fry should not be too long. Add a little salt, chicken essence, and a little starch to thicken the pot.
